My husband spent a part of his childhood with his grandmother. I also got to know her. She was a sweet old person with white hair. She always cooked easy food because she was old. She made such good fried meatballs that I could never make meatballs as good as hers, neither have I tasted any that was as tasty. The recipe that follows was also one of hers and we have named this eggplant dish after her. Lovingly called Grandmother, it is a very healthy dish.
1 green , 1 yellow , 1 red bell pepper
1/2 rakı glass of olive oil
2-3 tablespoons of yoghurt , a pinch of salt
2- 3 cloves of garlic
Eggplants are peeled lengthwise and then cut into quarts diagonally. The pieces are then cut into cubes and placed in salty water for 20 minutes. Then they are rinsed and thoroughly dried with a clean cloth.
Pepper are cut lengthwise and then into large chunks. Olive oil is placed inside a pan and when the oil gets hot pepper are added and fried. The rinsed and dried eggplants are added to the peppers. Salt is added and mixed. The mixture is cooked on low heat until the eggplants are tender.
When the dish is cool, yoghurt with garlic is mixed in and finished with chopped dill.
