This is a rice dish that is even better than risotto. When you add a green salad and an apple to it, you will have a tasty lunch with barely no calories !
2 cups of white rice
A tablespoon of butter, a tablespoon of extra virgin olive
3 ripe tomatoes
Juice of less than half a lemon
2 teaspoons of salt
1 teaspoon of sugar ,
1, 5 cups of veal or chicken broth
Rice is cleaned, and washed under cold water until the white juice disappears. Butter and olive oil is placed in a pan and grated tomatoes are added when the butter melts. When the tomatoes have softened, strained rice is added and the mixture is cooked until the rice turns translucent. Veal or chicken broth is added along with salt and sugar. The lid is placed. After two boils, the heat is turned down. When the liquid completely evaporates, the heat is turned off, the rice is stirred and covered with a clean cloth.
